Ingredients

3 bell peppers, red, orange and yellow
2 cups raw spinach leaves
2 tsp. garlic powder
1 tbsp. olive oil

Directions

Saute all ingredients together in a large skillet until the peppers are cooked to your liking.

This would be even more excellent with sauteed cubes of firm tofu.

I think a little vinegar would add flavor too, especially a good balsamic vinegar.
