Easy Brown Rice Parmesan

Have kids that won’t eat zucchini? This is the perfect way to serve it to them! They won’t taste the zucchini at all and I’ll bet you a dollar they’ll be back for seconds!

Easy Brown Rice Parmesan

Ingredients

1 cup dry brown rice, cooked with water to package directions
1 cup grated parmesan
1 tsp. garlic powder
2 cups grated zucchini
Salt to taste (optional and probably not necessary)

Directions

While the rice is cooking, grate the zucchini and measure out the parmesan.

Once the rice is done cooking, immediately stir in the cheese and zucchini. Continue stirring until the cheese is melted from the heat of the rice. Stir in the garlic powder and salt if you need it.

I am making this tonight. It looks and sounds great! Do you think it would freeze well? I am having a baby in a couple of months and I am looking for things to freeze (I have 4 children) in preperation.

I haven’t frozen it myself, but I don’t see why not. Try making a small batch and test a tiny bit in the freezer. It should work fine.

THANK YOU! My kids (15) and (7) LOVED this! It was so easy and delicious! My 7 year old loves any vegetable that I put in front of him, while my 15year old hates them all. This recipe made everyone happy, and I plan on making this again often! Thank you SO SO much!
